Undergraduate Research Assistant
Amy Lo is a senior undergraduate student majoring in nutrition at the Gillings School of Global Public Health at UNC and minoring in chemistry and food studies. She is currently working under Dr. Shu Wen Ng to complete her honors thesis on comparing rural and urban purchasing patterns in North Carolina as well as a study on the national effects of COVID-19 on online grocery shopping with Emily Duffy and Alex Ross. Her interest stems from her longterm involvement in volunteerism with fighting food insecurity and hunger at The Food Ark, a student-run nonprofit.
