Paola Stackmann Waldheim
FERN fellow, 2025
Paola Stackmann joined the Global Food Research Program for the 2025 FERN fellowship during her junior year at Baylor University, where she is majoring in nutrition sciences with a pre-dietetics concentration and minoring in business administration. Originally from Guatemala City, Guatemala, Paola is passionate about nutrition education and improving conditions for underserved communities. Her background includes leadership, clinical volunteer work, and small business experience, which have shaped her interest in bridging nutrition science with community impact. At Baylor, she is the philanthropy chair of the Student Dietetic Nutrition Association. As a FERN fellow, Paola is working under the mentorship of Maria Fernanda Parra-Murillo.
My go-to comfort food is… a salmon bowl with sriracha
